These no-bake chocolate energy bites are perfect for a quick snack or a healthy treat.
Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter (or peanut butter)
- 1/3 cup honey or maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/2 cup mini chocolate chips
- 1/4 cup ground flaxseed
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), cocoa powder, mini chocolate chips, ground flaxseed, vanilla extract, and salt.
- Mix all the ingredients together until well combined. You may need to use your hands to ensure everything is evenly mixed.
- Once the mixture is well combined, refrigerate it for about 30 minutes to make it easier to handle.
- After chilling, scoop out tablespoon-sized portions of the mixture and roll them into balls.
- Place the energy bites on a baking sheet lined with parchment paper and refrigerate for another 30 minutes to firm up.
- Store the energy bites in an airtight container in the refrigerator for up to one week.
Notes
- For added flavor, consider mixing in 1/4 cup of shredded coconut or chopped nuts.
- To make these bites more indulgent, substitute half of the mini chocolate chips with dried fruit like cranberries or raisins.
