  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 6-8 minutes. Drain any excess fat.
  4. Stir in the chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper (if using). Cook for 1-2 minutes to toast the spices.
  5. Add the diced tomatoes, tomato paste, kidney beans, and beef broth to the pot. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 30-40 minutes, stirring occasionally.
  7. If the chili becomes too thick, add a little more beef broth or water.
  8. Taste and adjust seasoning if necessary. Serve hot, garnished with your choice of toppings like shredded cheese, sour cream, or chopped green onions.
