Description

Chilaquiles are a traditional Mexican dish made with fried corn tortillas, topped with a flavorful sauce and various toppings.


Ingredients

  • 8 corn tortillas, cut into quarters
  • 1 cup vegetable oil (for frying)
  • 1 cup red enchilada sauce
  • 1/2 cup chicken broth
  • 1 cup shredded cooked chicken (optional)
  • 1/2 cup crumbled queso fresco or feta cheese
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced
  • 1/2 cup diced onion
  • 1 jalapeño, sliced (optional)
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Once hot, add the tortilla quarters in batches and fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
  2. In the same skillet, reduce the heat to low and add the red enchilada sauce and chicken broth. Stir to combine and let it simmer for about 2 minutes.
  3. Add the fried tortilla chips to the skillet, tossing gently to coat them in the sauce. If using, add the shredded chicken and stir until everything is well combined.
  4. Cook for an additional 2-3 minutes until the chips are slightly softened but still retain some crunch.
  5. Remove from heat and transfer to a serving platter. Top with crumbled queso fresco, sour cream, chopped cilantro, avocado slices, diced onion, and jalapeño slices if desired.
  6. Serve immediately while hot.

Notes

  • For a vegetarian option, omit the chicken and add black beans for extra protein.
