Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (15 ounces) tomato sauce
  • 1 cup heavy cream
  • Fresh cilantro, for garnish

Instructions

  1. In a large bowl, combine the yogurt, lemon juice, cumin, coriander, garam masala, turmeric, paprika, salt, and black pepper. Add the chicken pieces and mix until well coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.
  2. Preheat your oven to 400°F. Line a baking sheet with foil and place a wire rack on top. Arrange the marinated chicken pieces on the rack and bake for 20-25 minutes, or until cooked through and slightly charred.
  3. While the chicken is baking, heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  4. Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  5. Pour in the tomato sauce and bring to a simmer. Cook for about 10 minutes, allowing the flavors to meld.
  6. Reduce the heat to low and stir in the heavy cream. Add the baked chicken pieces and simmer for another 5-10 minutes until heated through.
  7. Garnish with fresh cilantro before serving.

  • For a spicier version, add 1-2 teaspoons of cayenne pepper to the marinade or the sauce.
