A delicious and healthy Chicken Tahini Roasted Cauliflower Dukkah Plate that combines tender chicken thighs with roasted cauliflower, drizzled with a creamy tahini sauce and topped with dukkah spice mix.

- 2 cups cauliflower florets
- 1 pound boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1/4 cup water (more if needed)
- 1/4 cup dukkah spice mix (store-bought or homemade)
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread the cauliflower on the prepared baking sheet in a single layer.
- In the same bowl, add the chicken thighs and the remaining tablespoon of olive oil, seasoning with salt and pepper. Toss to coat. Place the chicken on the baking sheet alongside the cauliflower.
- Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the cauliflower is tender and golden brown.
- While the chicken and cauliflower are roasting, prepare the tahini sauce. In a small bowl, whisk together tahini, lemon juice, honey, and water until smooth. Adjust the consistency by adding more water if needed.
- Once the chicken and cauliflower are done, remove them from the oven. Let the chicken rest for a few minutes before slicing.
- To serve, arrange the roasted cauliflower and sliced chicken on a platter. Drizzle with tahini sauce and sprinkle with dukkah. Garnish with chopped parsley and serve with lemon wedges on the side.
Notes
- For added flavor, marinate the chicken in the olive oil, garlic powder, and paprika for at least 30 minutes before roasting.
- Substitute the cauliflower with broccoli or Brussels sprouts for a different vegetable option.
