A delightful Chicken Shawarma Cauliflower Pickled Turnip Tahini Mess that combines tender chicken thighs with roasted cauliflower, pickled turnips, and a creamy tahini sauce.

- 2 cups cauliflower florets
- 1 pound boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 1 cup pickled turnips, sliced
- 1/2 cup tahini
- 1/4 cup water
- 2 tablespoons lemon juice
- Fresh parsley, chopped (for garnish)
- Pita bread or rice (for serving)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread them out on the prepared baking sheet.
- In the same bowl, combine the chicken thighs with the remaining olive oil, cumin, coriander, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Mix well to coat the chicken evenly.
- Place the seasoned chicken on the baking sheet alongside the cauliflower. Bake for 25-30 minutes, or until the chicken is cooked through and the cauliflower is tender and slightly browned.
- While the chicken and cauliflower are baking, prepare the tahini sauce. In a small bowl, whisk together tahini, water, lemon juice, and a pinch of salt until smooth. Adjust the water for desired consistency.
- Once the chicken and cauliflower are done, remove them from the oven and let them cool slightly. Slice the chicken into strips.
- In a large serving bowl, combine the cauliflower, sliced chicken, and pickled turnips. Drizzle with tahini sauce and garnish with chopped parsley.
- Serve warm with pita bread or over rice.
Notes
- For extra flavor, marinate the chicken in the spices and olive oil for at least 30 minutes before baking.
- You can also add roasted chickpeas for added crunch and protein.
- If you prefer a vegetarian option, substitute the chicken with chickpeas or tofu seasoned with the same spices.
