A delicious and easy-to-make Chicken Quesadilla recipe that is perfect for any meal.

- 2 cups cooked, shredded chicken
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced bell peppers (any color)
- 1/2 cup diced onion
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 4 large flour tortillas
- 2 tablespoons olive oil
- Sour cream and salsa for serving
Instructions
- In a large bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, bell peppers, onion, garlic powder, chili powder, cumin, salt, and pepper. Mix well until all ingredients are evenly combined.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Place one tortilla in the skillet and spread half of the chicken mixture evenly over one half of the tortilla.
- Fold the tortilla in half to cover the filling and cook for about 3-4 minutes, or until the bottom is golden brown and the cheese is melted.
- Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side.
- Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges.
- Repeat steps 2-6 with the remaining tortillas and filling.
- Serve warm with sour cream and salsa on the side.
Notes
- For a spicier kick, add diced jalapeños or a sprinkle of cayenne pepper to the filling.
- Substitute the chicken with cooked shrimp or sautéed vegetables for a vegetarian option.
