A comforting Chicken Pot Pie recipe that combines tender chicken, mixed vegetables, and a creamy filling, all encased in a flaky pie crust.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup carrots, diced
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 package (14.1 ounces) refrigerated pie crusts (2 crusts)

Instructions

  1. Preheat the oven to 425°F.
  2. In a large skillet, melt the butter over medium heat. Add the onion, celery, and carrots. Sauté for about 5 minutes until the vegetables are tender.
  3. Stir in the flour, garlic powder, thyme, salt, and pepper. Cook for 1-2 minutes until the mixture is bubbly.
  4. Gradually whisk in the chicken broth and milk. Continue to cook, stirring constantly, until the mixture thickens and bubbles.
  5. Add the cooked chicken and frozen mixed vegetables to the skillet. Stir until well combined. Remove from heat.
  6. Roll out one pie crust and fit it into a 9-inch pie pan. Pour the chicken mixture into the crust.
  7. Roll out the second pie crust and place it over the filling. Seal the edges by crimping with a fork or your fingers. Cut a few slits in the top crust to allow steam to escape.
  8. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown. Let it cool for 10 minutes before serving.

Notes

  • For a creamier filling, add 1/4 cup of heavy cream to the mixture before pouring it into the pie crust.
  • To make it a bit healthier, substitute the butter with olive oil and use whole wheat pie crusts.
