- 2 pounds bone-in, skin-on chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup chicken broth
- 1 cup dry white wine
- 1 tablespoon tomato paste
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 tablespoon butter
Instructions
- Season the chicken thighs with salt and pepper.
- In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
- Add the chicken thighs, skin-side down, and cook until browned, about 5-7 minutes.
- Flip and brown the other side for another 5 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and cook until softened, about 3-4 minutes.
- Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are browned, about 5 minutes.
- Pour in the chicken broth and white wine, scraping up any browned bits from the bottom of the skillet.
- Stir in the tomato paste and thyme.
- Return the chicken to the skillet, skin-side up, and bring the mixture to a simmer.
- Cover the skillet and reduce the heat to low. Cook for about 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove the chicken and keep warm.
- Increase the heat to medium-high and let the sauce simmer uncovered for an additional 5-10 minutes to thicken.
- Stir in the butter until melted and smooth.
- Return the chicken to the skillet to coat with the sauce.
- Serve the chicken hot, garnished with chopped parsley.
Notes
- For a richer flavor, add a splash of balsamic vinegar to the sauce before serving.
- You can substitute the chicken thighs with boneless, skinless chicken breasts for a leaner option.
- Serve with crusty bread or over rice to soak up the delicious sauce.
