Creamy Chicken Alfredo Pasta

- 2 cups fettuccine pasta
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup unsalted butter (1 stick)
- 1/4 teaspoon nutmeg (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with garlic powder, Italian seasoning, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Once melted, pour in the heavy cream and bring to a gentle simmer. Stir frequently for about 2-3 minutes.
- Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. If using, add the nutmeg for extra flavor.
- Return the cooked chicken to the skillet and add the drained fettuccine. Toss everything together until the pasta is well coated with the Alfredo sauce.
- Serve immediately, garnished with chopped parsley.
Notes
- For a lighter version, substitute half-and-half for the heavy cream and reduce the butter.
- Add steamed broccoli or sautéed mushrooms for extra vegetables and flavor.
