Description

Savory Chicken Adobo is a must-try dish from the Philippines, known for its rich flavors and tender chicken.


Ingredients

  • 2 pounds chicken thighs, bone-in and skin-on
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 1 tablespoon vegetable oil
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1 tablespoon brown sugar (optional)
  • Salt to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. In a large bowl, combine the chicken thighs, soy sauce, vinegar, water, bay leaves, and black peppercorns. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  2. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Remove the chicken from the marinade (reserve the marinade) and brown the chicken on all sides, about 5-7 minutes.
  3. Add the sliced onion and minced garlic to the pot, stirring until the onions are translucent, about 3 minutes.
  4. Pour the reserved marinade into the pot, add brown sugar if using, and bring to a boil. Reduce the heat to low, cover, and simmer for 30-40 minutes, or until the chicken is tender and cooked through.
  5. Taste and adjust seasoning with salt if needed. If you prefer a thicker sauce, remove the lid and simmer for an additional 10-15 minutes.
  6. Serve hot over steamed rice, garnished with chopped green onions if desired.

Notes

  • For a spicier version, add 1-2 whole dried red chilies to the marinade.
  • You can substitute chicken thighs with chicken breasts for a leaner option, but adjust cooking time as they may cook faster.
