  • 1 cup sour cream
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with cooking spray or butter.
  2. In a medium bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
  4. Gradually add 1 cup sugar and vanilla extract, mixing until well combined.
  5. Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.
  6. Stir in the sour cream and flour until smooth.
  7. Pour the cheesecake batter over the cooled crust in the springform pan.
  8. Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
  9. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour. This helps prevent cracking.
  10. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
