Description

Chapati rolls (East Africa) are a must-try delight filled with spiced chicken and served with yogurt.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 3/4 cup water (adjust as needed)
  • 2 tablespoons vegetable oil (plus more for cooking)
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup plain yogurt (for serving)

Instructions

  1. In a large bowl, combine the flour and salt. Gradually add water and mix until a soft dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
  3. In a large skillet, heat 2 tablespoons of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in the garlic and ginger, cooking for another minute.
  5. Add the chicken pieces and cook until browned on all sides.
  6. Sprinkle in the cumin, coriander, paprika, turmeric, salt, and pepper. Stir well to coat the chicken with the spices.
  7. Cover and cook for about 10-15 minutes, or until the chicken is cooked through. Stir in the chopped cilantro and remove from heat.
  8. Divide the rested dough into 8 equal portions. Roll each portion into a ball and flatten it into a circle about 6 inches in diameter.
  9. Heat a skillet over medium-high heat and lightly grease it with oil. Cook each chapati for about 1-2 minutes on each side until golden brown and puffed.
  10. To assemble, place a chapati on a plate, add a generous scoop of the spiced chicken filling, and roll it up tightly. Serve warm with a side of plain yogurt for dipping.

Notes

  • For a vegetarian option, substitute the chicken with sautéed vegetables such as bell peppers, zucchini, and spinach.
  • You can also add a sprinkle of cheese for extra flavor.
  • For a spicy kick, include sliced jalapeños or a drizzle of hot sauce in the filling.
