Description
Chapati rolls (East Africa) are a must-try delight filled with spiced chicken and served with yogurt.

- 2 cups all-purpose flour
- 1 teaspoon salt
- 3/4 cup water (adjust as needed)
- 2 tablespoons vegetable oil (plus more for cooking)
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
- 1/2 cup plain yogurt (for serving)
Instructions
- In a large bowl, combine the flour and salt. Gradually add water and mix until a soft dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
- In a large skillet, heat 2 tablespoons of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and ginger, cooking for another minute.
- Add the chicken pieces and cook until browned on all sides.
- Sprinkle in the cumin, coriander, paprika, turmeric, salt, and pepper. Stir well to coat the chicken with the spices.
- Cover and cook for about 10-15 minutes, or until the chicken is cooked through. Stir in the chopped cilantro and remove from heat.
- Divide the rested dough into 8 equal portions. Roll each portion into a ball and flatten it into a circle about 6 inches in diameter.
- Heat a skillet over medium-high heat and lightly grease it with oil. Cook each chapati for about 1-2 minutes on each side until golden brown and puffed.
- To assemble, place a chapati on a plate, add a generous scoop of the spiced chicken filling, and roll it up tightly. Serve warm with a side of plain yogurt for dipping.
Notes
- For a vegetarian option, substitute the chicken with sautéed vegetables such as bell peppers, zucchini, and spinach.
- You can also add a sprinkle of cheese for extra flavor.
- For a spicy kick, include sliced jalapeños or a drizzle of hot sauce in the filling.
