Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1/4 cup vegetable oil

  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.
  2. In a large mixing bowl, whisk together the eggs and sugar until the mixture is thick and pale, about 5 minutes.
  3. In a separate bowl, sift together the flour, baking powder, and salt.
  4. Gently fold the dry ingredients into the egg mixture, being careful not to deflate the batter.
  5. In a small saucepan, combine the milk and vegetable oil. Heat over low until warm, then stir in the vanilla extract.
  6. Gradually add the warm milk mixture to the batter, folding gently until fully incorporated.
  7. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Once baked, remove from the oven and let cool in the pan for 10 minutes. Then, lift the cake out using the parchment overhang and let it cool completely on a wire rack.
  9. Once cooled, slice and serve.
