- 3 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.
- In a large mixing bowl, whisk together the eggs and sugar until the mixture is thick and pale, about 5 minutes.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gently fold the dry ingredients into the egg mixture, being careful not to deflate the batter.
- In a small saucepan, combine the milk and vegetable oil. Heat over low until warm, then stir in the vanilla extract.
- Gradually add the warm milk mixture to the batter, folding gently until fully incorporated.
- Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, remove from the oven and let cool in the pan for 10 minutes. Then, lift the cake out using the parchment overhang and let it cool completely on a wire rack.
- Once cooled, slice and serve.
Notes
- For a richer flavor, consider adding a teaspoon of matcha powder to the dry ingredients for a green tea twist.
- Alternatively, you can drizzle a simple syrup over the cake after it cools for added moisture and sweetness.
