- 2 cups grated cassava (fresh or frozen, thawed)
- 1 cup coconut milk
- 1 cup sweetened condensed milk
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup shredded coconut (optional, for topping)
- 1/4 cup cheese, grated (optional, for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the grated cassava, coconut milk, sweetened condensed milk, granulated sugar, all-purpose flour, salt, vanilla extract, and eggs. Mix well until all ingredients are fully incorporated.
- Pour the mixture into the prepared baking dish and spread it evenly.
- If using, sprinkle the shredded coconut and grated cheese evenly over the top of the mixture.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool for about 10 minutes before slicing into squares.
Notes
- For a richer flavor, substitute half of the coconut milk with evaporated milk.
- Add a pinch of cinnamon or nutmeg to the batter for a warm spice flavor.
