Description

Discover the delightful recipe for Cassava Cake, a popular dessert in the Philippines made with grated cassava and coconut milk.

Ingredients

Scale
  • 2 cups grated cassava (fresh or frozen, thawed)
  • 1 cup coconut milk
  • 1 cup sweetened condensed milk
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup shredded coconut (optional, for topping)
  • 1/4 cup cheese, grated (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the grated cassava, coconut milk, sweetened condensed milk, granulated sugar, all-purpose flour, salt, vanilla extract, and eggs. Mix well until all ingredients are fully incorporated.
  3. Pour the mixture into the prepared baking dish and spread it evenly.
  4. If using, sprinkle the shredded coconut and grated cheese evenly over the top of the mixture.
  5. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Remove from the oven and let it cool for about 10 minutes before slicing into squares.

Notes

  • For a richer flavor, substitute half of the coconut milk with evaporated milk.
  • Add a pinch of cinnamon or nutmeg to the batter for a warm spice flavor.
