Description

Caramel Pecan Praline Velvet Bars (Keto) are deliciously easy to make and perfect for a low-carb treat.


Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup erythritol or preferred keto sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the caramel layer:
  • 1/2 cup heavy cream
  • 1/4 cup unsweetened almond butter
  • 1/4 cup erythritol or preferred keto sweetener
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans, toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt. Mix well.
  3. In another bowl, whisk together the melted butter, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined. The mixture will be thick.
  5. Spread the batter evenly into the prepared baking pan. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  6. While the bars are baking, prepare the caramel layer. In a saucepan over medium heat, combine heavy cream, almond butter, erythritol, and vanilla extract. Stir continuously until the mixture is smooth and slightly thickened, about 5-7 minutes.
  7. Remove the bars from the oven and let them cool for about 10 minutes. Pour the caramel mixture over the warm bars, spreading it evenly.
  8. Sprinkle the toasted pecans on top of the caramel layer and gently press them in.
  9. Allow the bars to cool completely at room temperature, then refrigerate for at least 1 hour to set before cutting into squares.

Notes

  • For an extra layer of flavor, add a pinch of sea salt on top of the caramel layer before it sets.
  • Substitute the almond butter with peanut butter for a different taste, ensuring it remains keto-friendly.
