Description

Delicious homemade Cannoli filled with a creamy ricotta mixture and garnished with chocolate chips and pistachios.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon white wine vinegar
  • 1/2 cup Marsala wine (or dry white wine)
  • 1 cup ricotta cheese, drained
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips (optional)
  • 1/4 cup chopped pistachios (for garnish)
  • Oil for frying

Instructions

  1. In a large bowl, whisk together the flour, sugar, and salt.
  2. Add the softened butter and mix until crumbly.
  3. In a separate bowl, beat the egg with the vinegar and Marsala wine.
  4. Gradually add the wet ingredients to the flour mixture and mix until a dough forms.
  5. Knead the dough on a floured surface for about 5 minutes until smooth.
  6. Wrap in plastic wrap and refrigerate for at least 1 hour.
  7. Roll out the dough on a floured surface to about 1/8 inch thick.
  8. Cut into circles about 4 inches in diameter.
  9. Wrap each circle around a cannoli tube, sealing the edges with a little water.
  10. Heat oil in a deep fryer or large pot to 350°F.
  11. Fry the wrapped tubes in batches until golden brown, about 2-3 minutes per side.
  12. Remove and drain on paper towels. Let cool slightly before removing the tubes.
  13. In a medium bowl, mix the ricotta cheese, powdered sugar, and vanilla extract until smooth.
  14. Fold in the mini chocolate chips if using.
  15. Fill a piping bag with the ricotta mixture and pipe it into the cooled shells.
  16. Dust with powdered sugar and sprinkle with chopped pistachios before serving.

Notes

  • For a chocolate twist, substitute half of the ricotta with mascarpone cheese.
  • For a citrus flavor, add the zest of one orange or lemon to the ricotta filling.
