Description
Delicious homemade Cannoli filled with a creamy ricotta mixture and garnished with chocolate chips and pistachios.

- 2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1/2 teaspoon white wine vinegar
- 1/2 cup Marsala wine (or dry white wine)
- 1 cup ricotta cheese, drained
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips (optional)
- 1/4 cup chopped pistachios (for garnish)
- Oil for frying
Instructions
- In a large bowl, whisk together the flour, sugar, and salt.
- Add the softened butter and mix until crumbly.
- In a separate bowl, beat the egg with the vinegar and Marsala wine.
- Gradually add the wet ingredients to the flour mixture and mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth.
- Wrap in plastic wrap and refrigerate for at least 1 hour.
- Roll out the dough on a floured surface to about 1/8 inch thick.
- Cut into circles about 4 inches in diameter.
- Wrap each circle around a cannoli tube, sealing the edges with a little water.
- Heat oil in a deep fryer or large pot to 350°F.
- Fry the wrapped tubes in batches until golden brown, about 2-3 minutes per side.
- Remove and drain on paper towels. Let cool slightly before removing the tubes.
- In a medium bowl, mix the ricotta cheese, powdered sugar, and vanilla extract until smooth.
- Fold in the mini chocolate chips if using.
- Fill a piping bag with the ricotta mixture and pipe it into the cooled shells.
- Dust with powdered sugar and sprinkle with chopped pistachios before serving.
Notes
- For a chocolate twist, substitute half of the ricotta with mascarpone cheese.
- For a citrus flavor, add the zest of one orange or lemon to the ricotta filling.
