Description

A delicious and easy-to-make keto-friendly treat that combines the rich flavors of butter and walnuts in a toffee candy.


Ingredients

  • 2 cups walnuts, chopped
  • 1 cup unsalted butter
  • 1 cup erythritol or preferred keto sweetener
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Spread the chopped walnuts on a baking sheet and toast them in the oven for about 8-10 minutes, or until golden brown. Keep an eye on them to prevent burning. Remove from the oven and set aside.
  2. In a medium saucepan over medium heat, melt the butter. Once melted, add the erythritol, vanilla extract, and salt. Stir until the sweetener is fully dissolved and the mixture is smooth.
  3. Increase the heat to medium-high and bring the mixture to a boil, stirring constantly. Allow it to boil for about 5-7 minutes, or until it reaches a deep amber color. Be careful not to let it burn.
  4. Remove the saucepan from the heat and quickly stir in the baking soda. The mixture will bubble up, so be cautious.
  5. Immediately fold in the toasted walnuts until they are well coated with the toffee mixture.
  6. Pour the mixture onto a parchment-lined baking sheet and spread it out evenly. Let it cool for about 30 minutes at room temperature until set.
  7. If using chocolate chips, melt them in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the cooled toffee and let it set.
  8. Once completely cooled, break the toffee into pieces and store in an airtight container.

Notes

  • For a different flavor, try adding a teaspoon of almond extract instead of vanilla.
  • You can substitute pecans or almonds for the walnuts for a unique twist on the candy.
