A delicious and easy-to-make keto-friendly treat that combines the rich flavors of butter and walnuts in a toffee candy.

- 2 cups walnuts, chopped
- 1 cup unsalted butter
- 1 cup erythritol or preferred keto sweetener
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup sugar-free chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Spread the chopped walnuts on a baking sheet and toast them in the oven for about 8-10 minutes, or until golden brown. Keep an eye on them to prevent burning. Remove from the oven and set aside.
- In a medium saucepan over medium heat, melt the butter. Once melted, add the erythritol, vanilla extract, and salt. Stir until the sweetener is fully dissolved and the mixture is smooth.
- Increase the heat to medium-high and bring the mixture to a boil, stirring constantly. Allow it to boil for about 5-7 minutes, or until it reaches a deep amber color. Be careful not to let it burn.
- Remove the saucepan from the heat and quickly stir in the baking soda. The mixture will bubble up, so be cautious.
- Immediately fold in the toasted walnuts until they are well coated with the toffee mixture.
- Pour the mixture onto a parchment-lined baking sheet and spread it out evenly. Let it cool for about 30 minutes at room temperature until set.
- If using chocolate chips, melt them in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the cooled toffee and let it set.
- Once completely cooled, break the toffee into pieces and store in an airtight container.
Notes
- For a different flavor, try adding a teaspoon of almond extract instead of vanilla.
- You can substitute pecans or almonds for the walnuts for a unique twist on the candy.
