Ingredients

  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 3 tablespoons ice water
  • 1/2 cup brown sugar, packed
  • 1/2 cup corn syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup raisins or pecans (optional)

Instructions

  1. In a mixing bowl, combine the flour and salt. Add the chilled butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a ball, flatten it into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles to fit into a muffin tin, pressing them into the bottom and sides of each cup.
  5. In a separate bowl, whisk together the brown sugar, corn syrup, egg, vanilla extract, and cinnamon until smooth.
  6. If using, place a few raisins or pecans at the bottom of each tart shell. Pour the filling mixture over the raisins or pecans, filling each shell about 2/3 full.
  7. Bake in the preheated oven for 20-25 minutes, or until the filling is set and the crust is golden brown.
  8. Allow the tarts to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a richer flavor, substitute half of the corn syrup with maple syrup.
  • Experiment with different fillings by adding chocolate chips or coconut flakes for a twist on the classic butter tart.
