Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 can (15 oz) tomato puree
  • 1 cup heavy cream
  • Fresh cilantro, for garnish

Instructions

  1. In a large bowl, combine the yogurt, lemon juice, cumin, coriander, turmeric, garam masala, chili powder, and salt. Add the chicken pieces, mix well, and marinate for at least 1 hour in the refrigerator (or overnight for best flavor).
  2. In a large skillet or saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  3. Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the marinated chicken (along with the marinade) to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned.
  5. Pour in the tomato puree and bring to a simmer. Reduce heat to low and let it cook for 15 minutes, stirring occasionally.
  6. Stir in the heavy cream and remaining 2 tablespoons of butter. Cook for another 5 minutes until heated through and well combined.
  7. Garnish with fresh cilantro before serving.

Notes

  • For a spicier version, add more chili powder or a diced jalapeño during cooking.
  • Serve with basmati rice or naan bread to soak up the delicious sauce. You can also add vegetables like peas or spinach for extra nutrition.
