- 2 medium zucchinis
- 1 pound ground beef (or turkey)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 packet (1 ounce) taco seasoning
- 1 cup salsa
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the center using a spoon to create boats. Place them cut-side up in a baking dish.
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
- Add minced garlic and ground beef (or turkey) to the skillet. Cook until the meat is browned and cooked through, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
- Stir in black beans, corn, taco seasoning, and salsa. Cook for an additional 3-4 minutes until heated through. Season with salt and pepper to taste.
- Spoon the filling mixture evenly into the zucchini boats.
- Top each filled zucchini with shredded cheddar cheese.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly. Garnish with fresh cilantro before serving.
Notes
- For a vegetarian option, substitute the ground meat with crumbled tofu or additional beans.
- Add diced bell peppers or jalapeños to the filling for extra flavor and heat.
