Burrito Zucchini Boats are a flavorful and healthy dish that combines zucchini with a savory filling of ground beef, beans, corn, and cheese, baked to perfection.


Ingredients

  • 2 medium zucchinis
  • 1 pound ground beef (or turkey)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 packet (1 ounce) taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center using a spoon to create boats. Place them cut-side up in a baking dish.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
  4. Add minced garlic and ground beef (or turkey) to the skillet. Cook until the meat is browned and cooked through, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  5. Stir in black beans, corn, taco seasoning, and salsa. Cook for an additional 3-4 minutes until heated through. Season with salt and pepper to taste.
  6. Spoon the filling mixture evenly into the zucchini boats.
  7. Top each filled zucchini with shredded cheddar cheese.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool slightly. Garnish with fresh cilantro before serving.
