Description
Bunny chow is a traditional South African dish consisting of a hollowed-out loaf of bread filled with spicy curry.

- 2 cups of all-purpose flour
- 1 teaspoon of instant yeast
- 1 teaspoon of salt
- 3/4 cup of warm water
- 1 tablespoon of vegetable oil
- 1 pound of boneless chicken, cut into bite-sized pieces
- 1 tablespoon of vegetable oil
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of ginger, minced
- 2 tablespoons of curry powder
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 can (14 ounces) of diced tomatoes
- 1 cup of coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large bowl, combine flour, instant yeast, and salt.
- Gradually add warm water and vegetable oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- While the dough is rising, heat vegetable oil in a large skillet over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in garlic and ginger, cooking for another minute.
- Add chicken pieces and cook until browned on all sides.
- Sprinkle in curry powder, cumin, and coriander, stirring to coat the chicken.
- Pour in diced tomatoes and coconut milk, then season with salt and pepper.
- Bring to a simmer and cook for 15-20 minutes, until the chicken is cooked through and the sauce thickens slightly.
- Once the dough has risen, punch it down and divide it into four equal portions.
- Shape each portion into a small loaf or bowl.
- Place the shaped dough on a baking sheet lined with parchment paper.
- Let them rise for another 30 minutes.
- Preheat the oven to 375°F.
- Bake the dough for 20-25 minutes or until golden brown.
- Remove from the oven and let cool slightly.
- To serve, hollow out the center of each bread loaf and fill with the chicken curry mixture.
- Garnish with fresh cilantro.
Notes
- For a vegetarian option, substitute chicken with chickpeas or mixed vegetables.
- Add a splash of lime juice to the curry for a zesty flavor boost.
