Description

Broccoli Cheddar Chaffles are a delicious low-carb option that combines the flavors of broccoli and cheddar cheese into a crispy waffle.

Ingredients

Scale
  • 1 cup shredded broccoli (fresh or frozen, thawed and drained)
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or oil for greasing the waffle maker

Instructions

  1. Preheat your waffle maker according to the manufacturer’s instructions.
  2. In a large mixing bowl, combine the shredded broccoli, cheddar cheese, eggs, almond flour, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Lightly grease the waffle maker with cooking spray or oil.
  4. Pour half of the mixture into the preheated waffle maker, spreading it evenly.
  5. Close the waffle maker and cook for about 3-5 minutes, or until the chaffle is golden brown and crispy.
  6. Carefully remove the chaffle and repeat with the remaining mixture.
  7. Serve warm, garnished with extra cheese or a dollop of sour cream if desired.

Notes

  • For added flavor, mix in some cooked bacon bits or diced ham into the batter.
  • Experiment with different cheeses like mozzarella or pepper jack for a unique twist on the classic chaffle.
