  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper (red or yellow), sliced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 (14-ounce) can coconut milk
  • 1 (14-ounce) can diced tomatoes, drained
  • 1 pound white fish fillets (such as cod or tilapia), cut into chunks
  • 1 cup shrimp, peeled and deveined
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and sliced bell pepper, cooking for another 3-4 minutes until the peppers soften.
  3. Add the paprika, cumin, and cayenne pepper, stirring well to combine. Cook for 1-2 minutes until fragrant.
  4. Pour in the coconut milk and diced tomatoes, stirring to combine. Bring the mixture to a gentle simmer.
  5. Add the fish chunks and shrimp to the skillet, gently stirring to coat them in the sauce. Season with lime juice, salt, and pepper.
  6. Cover and simmer for about 10-15 minutes, or until the fish is cooked through and the shrimp are pink and opaque.
  7. Remove from heat and let it sit for a few minutes. Serve hot, garnished with fresh cilantro and lime wedges.

  • For a vegetarian version, substitute the fish and shrimp with firm tofu and add more vegetables like zucchini and carrots.
