  • 2 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 tablespoon ground coffee
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup red wine
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 1 bay leaf

Instructions

  1. Preheat your oven to 325°F.
  2. In a small bowl, combine ground coffee, brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper to create the coffee rub.
  3. Pat the short ribs dry with paper towels and rub the spice mixture all over the meat.
  4. In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.
  5. In the same pot, add chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened. Stir in minced garlic and cook for an additional minute.
  6. Pour in the red wine, scraping the bottom of the pot to deglaze. Let it simmer for about 5 minutes.
  7. Add the beef broth, thyme, and bay leaf to the pot. Return the short ribs to the pot, ensuring they are mostly submerged in the liquid.
  8. Cover the pot and transfer it to the preheated oven. Braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
  9. Once cooked, remove the pot from the oven and let it rest for 10 minutes before serving.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the coffee rub.
  • Serve the short ribs over creamy mashed potatoes or polenta to soak up the delicious sauce.
