Description
A classic French seafood stew, Bouillabaisse with Rouille is a delightful dish that combines various types of fish and shellfish in a flavorful broth, served with a spicy garlic mayonnaise.

- 2 tablespoons olive oil
- 1 large onion, chopped
- 1 large leek, white part only, chopped
- 2 cloves garlic, minced
- 1 large tomato, diced
- 1 teaspoon saffron threads
- 1 teaspoon dried thyme
- 1 bay leaf
- 4 cups fish stock or clam juice
- 1 cup dry white wine
- 1 pound firm white fish (such as cod or halibut), cut into chunks
- 1 pound shrimp, peeled and deveined
- 1 pound mussels, cleaned and debearded
- Salt and pepper to taste
- 1 baguette, sliced for serving
- For the Rouille: 1/2 cup mayonnaise
- 1 clove garlic, minced
- 1/4 teaspoon cayenne pepper
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and leek, and sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced tomato, saffron, thyme, bay leaf, fish stock, and white wine. Bring to a simmer and let cook for 10 minutes to allow the flavors to meld.
- Season the broth with salt and pepper. Add the fish chunks and simmer for 5 minutes.
- Add the shrimp and mussels to the pot. Cover and cook for an additional 5-7 minutes, until the mussels open and the shrimp are cooked through. Discard any mussels that do not open.
- While the bouillabaisse is cooking, prepare the rouille by mixing the mayonnaise, minced garlic, cayenne pepper, lemon juice, and salt in a small bowl until well combined.
- Serve the bouillabaisse hot, garnished with a dollop of rouille on top and slices of baguette on the side.
Notes
- For a spicier version, add a pinch of red pepper flakes to the broth.
- Feel free to substitute the seafood with your favorites, such as scallops or crab, for a different flavor profile.
