Ingredients

  • 1 cup steel-cut oats
  • 4 cups water
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound black pudding, sliced
  • 1 cup vegetable broth
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a medium saucepan, bring 4 cups of water to a boil. Add the steel-cut oats and salt. Reduce heat to low and simmer for about 20-25 minutes, stirring occasionally, until the oats are tender and creamy.
  2. While the oats are cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  4. Add the sliced black pudding to the skillet and cook for about 5-7 minutes, turning occasionally, until browned and heated through.
  5. Pour in the vegetable broth and sprinkle in the smoked paprika. Stir to combine and let simmer for another 3-4 minutes.
  6. Once the oats are cooked, serve them in bowls topped with the black pudding mixture. Garnish with fresh parsley.
