- 1 cup steel-cut oats
- 4 cups water
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 pound black pudding, sliced
- 1 cup vegetable broth
- 1 teaspoon smoked paprika
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In a medium saucepan, bring 4 cups of water to a boil. Add the steel-cut oats and salt. Reduce heat to low and simmer for about 20-25 minutes, stirring occasionally, until the oats are tender and creamy.
- While the oats are cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- Add the sliced black pudding to the skillet and cook for about 5-7 minutes, turning occasionally, until browned and heated through.
- Pour in the vegetable broth and sprinkle in the smoked paprika. Stir to combine and let simmer for another 3-4 minutes.
- Once the oats are cooked, serve them in bowls topped with the black pudding mixture. Garnish with fresh parsley.
Notes
- For a spicier kick, add a pinch of cayenne pepper or some chopped jalapeños to the onion and garlic mixture.
- Substitute black pudding with a vegetarian sausage or chorizo for a meat-free version.
