Description

A flavorful and aromatic spiced chicken biryani recipe that serves 4-6 people.


Ingredients

  • 2 cups basmati rice
  • 1 pound chicken, cut into bite-sized pieces
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 1/4 cup vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green chilies, slit lengthwise
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • Salt, to taste
  • 4 cups water
  • 1/4 cup raisins (optional)
  • 1/4 cup cashews (optional)

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and sliced onions, cooking until the onions are golden brown.
  3. Stir in the minced garlic, ginger, and green chilies. Cook for another 2 minutes until fragrant.
  4. Add the chicken pieces to the pot and cook until they are no longer pink, about 5-7 minutes.
  5. Stir in the chopped tomatoes, yogurt, coriander powder, turmeric powder, and salt. Cook for another 5 minutes until the tomatoes soften.
  6. Add the soaked and drained rice to the pot, followed by the water. Bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for 20 minutes, or until the rice is cooked and the water is absorbed.
  7. Once cooked, remove the pot from heat and let it sit, covered, for an additional 10 minutes.
  8. Fluff the biryani with a fork and gently mix in the garam masala, cilantro, and mint. If using, stir in the raisins and cashews.

Notes

  • For a vegetarian version, substitute chicken with mixed vegetables like peas, carrots, and bell peppers.
  • You can also add paneer for extra protein.
  • For a spicier biryani, increase the number of green chilies or add red chili powder to taste.
