Description
A quick and spicy chicken biryani recipe that is perfect for a delicious meal.

- 2 cups basmati rice
- 1 lb boneless chicken thighs, cut into bite-sized pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup plain yogurt
- 1/4 cup cooking oil
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 2 green chilies, slit lengthwise
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- 4 cups water
- 1 bay leaf
- 4 whole cloves
- 4 whole cardamom pods
- 1 cinnamon stick
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a large pot, heat the cooking oil over medium heat. Add the cumin seeds, bay leaf, cloves, cardamom pods, and cinnamon stick. Sauté for about 1 minute until fragrant.
- Add the sliced onions and cook until golden brown, about 5-7 minutes. Stir in the minced garlic, ginger, and green chilies, cooking for another 2 minutes.
- Add the chicken pieces and cook until they are no longer pink, about 5-6 minutes. Stir in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook for an additional 5 minutes until the tomatoes soften.
- Reduce the heat to low and mix in the yogurt, cilantro, mint, and garam masala. Cook for 2-3 minutes until well combined.
- In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice to the boiling water. Cook for about 5-7 minutes until the rice is 70% cooked. Drain the rice.
- Layer the partially cooked rice over the chicken mixture in the large pot. Cover tightly with a lid and cook on low heat for 20 minutes, allowing the flavors to meld and the rice to finish cooking.
- Remove from heat and let it sit, covered, for an additional 10 minutes before serving. Fluff the biryani gently with a fork.
Notes
- For a vegetarian version, substitute chicken with mixed vegetables or paneer.
- Add a handful of raisins and cashews for a sweet and nutty flavor twist.
