Description
Bibimbap is a delicious and colorful Korean dish that combines rice with a variety of vegetables, a fried egg, and spicy gochujang sauce, making it the perfect comfort food.

- 2 cups cooked white rice
- 1 cup spinach, blanched and chopped
- 1 cup carrots, julienned
- 1 cup zucchini, julienned
- 1 cup bean sprouts, blanched
- 1 cup shiitake mushrooms, sliced
- 4 large eggs
- 4 tablespoons gochujang (Korean chili paste)
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 teaspoon sesame seeds
- Salt, to taste
- Green onions, chopped (for garnish)
Instructions
- In a large skillet, heat vegetable oil over medium heat. Add the sliced shiitake mushrooms and sauté until tender, about 5 minutes. Season with a pinch of salt and set aside.
- In the same skillet, add the julienned carrots and zucchini. Sauté for about 3-4 minutes until they are tender but still crisp. Remove from heat and set aside.
- In a separate pot, bring water to a boil and blanch the spinach and bean sprouts for about 1-2 minutes. Drain and rinse under cold water. Squeeze out excess water and set aside.
- In a non-stick skillet, fry the eggs sunny-side up or to your desired doneness.
- To assemble, divide the cooked rice among four bowls. Arrange the sautéed vegetables, blanched spinach, and bean sprouts on top of the rice.
- Place a fried egg on top of each bowl. Drizzle with sesame oil and soy sauce, and add a tablespoon of gochujang to each bowl.
- Sprinkle with sesame seeds and chopped green onions for garnish. Serve immediately, mixing everything together before eating.
Notes
- For a vegetarian version, omit the egg or replace it with tofu.
- Add your favorite protein, such as grilled chicken or beef, for a heartier meal.
