- 1 cup almond flour
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking powder
- 2 large eggs
- 2 tablespoons erythritol or your preferred keto sweetener
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup sugar-free chocolate chips (optional)
Instructions
- Preheat your waffle maker according to the manufacturer’s instructions.
- In a mixing bowl, combine the almond flour, cocoa powder, baking powder, erythritol, and salt. Whisk until well blended.
- In another bowl, beat the eggs and then add the vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the sugar-free chocolate chips.
- Lightly grease the waffle maker with cooking spray or a little oil. Pour half of the batter into the preheated waffle maker, close the lid, and cook for about 3-5 minutes or until the chaffle is crispy.
- Carefully remove the chaffle and repeat with the remaining batter.
- Serve warm, optionally topped with whipped cream or additional sugar-free chocolate chips.
Notes
- To enhance the flavor, consider adding a pinch of espresso powder to the batter for a mocha twist.
- For a creamier texture, you can mix in a tablespoon of cream cheese into the batter before cooking.
