A simple and delicious recipe for crispy keto vanilla wafers that are perfect for snacking or dessert.

- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup erythritol (or preferred keto sweetener)
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, coconut flour, baking powder, salt, and erythritol. Mix well.
- In another bowl, cream together the softened butter, egg, vanilla extract, and almond extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball gently with the bottom of a glass or your hand to form thin wafers.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, try adding a pinch of cinnamon to the dry ingredients.
- You can also dip the cooled wafers in melted dark chocolate for a delicious treat.
- If you prefer a sweeter wafer, increase the erythritol to 1/3 cup.
