  • 1 tablespoon coconut oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon turmeric powder
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup beef broth
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the beef cubes to the pot, browning them on all sides for about 5-7 minutes.
  4. Sprinkle in the turmeric, coriander, cumin, chili powder, salt, and black pepper. Stir well to coat the beef with the spices.
  5. Pour in the beef broth, bring to a simmer, then cover and reduce heat to low. Cook for 1.5 to 2 hours, or until the beef is tender.
  6. Once the beef is tender, remove the lid and increase the heat to medium-high. Stir in the coconut flakes and lime juice. Cook for an additional 10-15 minutes, stirring frequently, until the liquid has evaporated and the beef is slightly caramelized.
  7. Remove from heat and let it cool slightly before serving. Garnish with fresh cilantro.
