Beef bourguignon is a classic French dish that combines tender beef with rich red wine and aromatic vegetables, creating the ultimate comfort food.

- 2 pounds beef chuck, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons olive oil, divided
- 4 ounces bacon, diced
- 1 large onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 2 cups red wine (preferably Burgundy or Pinot Noir)
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- 8 ounces pearl onions, peeled
- 8 ounces mushrooms, quartered
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). In a large bowl, toss the beef cubes with flour, salt, and pepper until evenly coated.
- In a large Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the bacon and cook until crispy. Remove the bacon and set aside, leaving the fat in the pot.
- In the same pot, add the beef in batches, browning on all sides. Remove the browned beef and set aside.
- Add the remaining olive oil to the pot, then add the chopped onion and carrots. Sauté for about 5 minutes until softened. Stir in the garlic and cook for an additional minute.
- Return the beef and bacon to the pot. Pour in the red wine and beef broth, then stir in the tomato paste, thyme, and bay leaves. Bring to a simmer.
- Cover the pot and transfer it to the preheated oven. Cook for 2 to 2.5 hours, or until the beef is tender.
- In the last 30 minutes of cooking, add the pearl onions and mushrooms to the pot.
- Once done, remove from the oven and discard the bay leaves. Let it sit for a few minutes before serving. Garnish with chopped parsley.
Notes
- For a richer flavor, let the beef bourguignon sit in the refrigerator overnight before reheating and serving.
- You can substitute the red wine with a low-sodium beef broth for a non-alcoholic version, though the flavor will be different.
