Ingredients

  • 3 ripe bananas, sliced
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups whole milk
  • 3 large eggs
  • 1/4 cup cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup heavy cream

Instructions

  1. In a medium saucepan over medium heat, combine the sugar, butter, and salt. Stir until the mixture turns a deep amber color, about 5-7 minutes. Be careful not to burn it.
  2. Remove the saucepan from heat and carefully stir in the vanilla extract. Set aside to cool slightly.
  3. In a separate bowl, whisk together the milk, eggs, cornstarch, and cinnamon until smooth.
  4. Gradually pour the milk mixture into the caramel sauce, whisking continuously to combine.
  5. Return the saucepan to medium heat and cook, stirring constantly, until the mixture thickens and bubbles, about 5-10 minutes.
  6. Remove from heat and fold in the sliced bananas.
  7. Pour the pudding into individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill in the refrigerator for at least 2 hours.
  8. Before serving, whip the heavy cream until soft peaks form and dollop on top of the pudding.
