- 3 ripe bananas, sliced
- 1 cup granulated sugar
- 1/4 cup unsalted butter
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups whole milk
- 3 large eggs
- 1/4 cup cornstarch
- 1/2 teaspoon ground cinnamon
- 1/2 cup heavy cream
Instructions
- In a medium saucepan over medium heat, combine the sugar, butter, and salt. Stir until the mixture turns a deep amber color, about 5-7 minutes. Be careful not to burn it.
- Remove the saucepan from heat and carefully stir in the vanilla extract. Set aside to cool slightly.
- In a separate bowl, whisk together the milk, eggs, cornstarch, and cinnamon until smooth.
- Gradually pour the milk mixture into the caramel sauce, whisking continuously to combine.
- Return the saucepan to medium heat and cook, stirring constantly, until the mixture thickens and bubbles, about 5-10 minutes.
- Remove from heat and fold in the sliced bananas.
- Pour the pudding into individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill in the refrigerator for at least 2 hours.
- Before serving, whip the heavy cream until soft peaks form and dollop on top of the pudding.
Notes
- For a twist, try adding a layer of crushed graham crackers for a crunchy texture.
- You can also substitute the bananas with other fruits like strawberries or peaches for a different flavor profile.
