Baked Feta Pasta is a delicious and easy-to-make dish that combines creamy feta cheese with roasted cherry tomatoes and pasta for a flavorful meal.

- 8 ounces pasta (penne or fusilli)
- 1 block (8 ounces) feta cheese
- 2 cups cherry tomatoes, halved
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil, for garnish
- Grated Parmesan cheese, for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, combine the cherry tomatoes, olive oil, minced garlic, oregano, red pepper flakes, salt, and pepper. Stir well to coat the tomatoes.
- Place the block of feta cheese in the center of the baking dish among the tomatoes. Drizzle a little more olive oil over the feta and season with salt and pepper.
- Bake in the preheated oven for 25-30 minutes, until the tomatoes are blistered and the feta is soft and slightly golden.
- While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.
- Once the feta and tomatoes are done, remove the baking dish from the oven. Use a fork to mash the feta and mix it with the tomatoes to create a creamy sauce.
- Add the cooked pasta to the baking dish and toss everything together until the pasta is well coated with the sauce.
- Serve immediately, garnished with fresh basil and grated Parmesan cheese if desired.

- For a vegetarian protein boost, add cooked chickpeas or spinach to the baking dish before roasting.
- Experiment with different cheeses, such as goat cheese or mozzarella, for a unique flavor twist.
