Description

Baked Feta Pasta is a delicious and easy-to-make dish that combines creamy feta cheese with roasted cherry tomatoes and pasta for a flavorful meal.


Ingredients

  • 8 ounces pasta (penne or fusilli)
  • 1 block (8 ounces) feta cheese
  • 2 cups cherry tomatoes, halved
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine the cherry tomatoes, olive oil, minced garlic, oregano, red pepper flakes, salt, and pepper. Stir well to coat the tomatoes.
  3. Place the block of feta cheese in the center of the baking dish among the tomatoes. Drizzle a little more olive oil over the feta and season with salt and pepper.
  4. Bake in the preheated oven for 25-30 minutes, until the tomatoes are blistered and the feta is soft and slightly golden.
  5. While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.
  6. Once the feta and tomatoes are done, remove the baking dish from the oven. Use a fork to mash the feta and mix it with the tomatoes to create a creamy sauce.
  7. Add the cooked pasta to the baking dish and toss everything together until the pasta is well coated with the sauce.
  8. Serve immediately, garnished with fresh basil and grated Parmesan cheese if desired.
