- 2 ripe avocados
- 4 large eggs
- 4 strips of bacon
- Salt, to taste
- Pepper, to taste
- Chopped fresh chives or parsley, for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels, then crumble into small pieces.
- Cut the avocados in half and remove the pits. Scoop out a little extra flesh from the center to create enough space for an egg.
- Place the avocado halves in a baking dish, cut side up. If they don’t sit flat, use crumpled foil to stabilize them.
- Carefully crack an egg into each avocado half. Sprinkle with salt and pepper.
- Bake in the preheated oven for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.
- Remove from the oven and sprinkle the crumbled bacon on top. Garnish with chopped chives or parsley if desired.
- Serve immediately while warm.
Notes
- For a spicy kick, add a few dashes of hot sauce or sprinkle red pepper flakes on top before baking.
- Substitute the bacon with cooked sausage or turkey bacon for a different flavor profile.
