Ingredients

  • 2 ripe avocados
  • 4 large eggs
  • 4 strips of bacon
  • Salt, to taste
  • Pepper, to taste
  • Chopped fresh chives or parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels, then crumble into small pieces.
  3. Cut the avocados in half and remove the pits. Scoop out a little extra flesh from the center to create enough space for an egg.
  4. Place the avocado halves in a baking dish, cut side up. If they don’t sit flat, use crumpled foil to stabilize them.
  5. Carefully crack an egg into each avocado half. Sprinkle with salt and pepper.
  6. Bake in the preheated oven for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.
  7. Remove from the oven and sprinkle the crumbled bacon on top. Garnish with chopped chives or parsley if desired.
  8. Serve immediately while warm.
