Instructions

  1. Begin by toasting the slices of whole grain bread until golden brown and crispy.
  2. While the bread is toasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
  3. Mash the avocado with a fork until smooth, then add a squeeze of fresh lemon juice, salt, and black pepper to taste. Mix well.
  4. In a skillet, heat the olive oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, or scrambled). Season with salt and pepper.
