- 2 ripe avocados
- 4 slices of whole grain bread
- 4 large eggs
- 1 tablespoon olive oil

- Red pepper flakes, optional
- Fresh lemon juice, to taste
- Fresh cilantro or parsley, for garnish (optional)
Instructions
- Begin by toasting the slices of whole grain bread until golden brown and crispy.
- While the bread is toasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with a fork until smooth, then add a squeeze of fresh lemon juice, salt, and black pepper to taste. Mix well.
- In a skillet, heat the olive oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, or scrambled). Season with salt and pepper.
- Once the toast is ready, spread a generous layer of the mashed avocado on each slice.
- Top each avocado toast with a cooked egg.
- Sprinkle with red pepper flakes, if desired, and garnish with fresh cilantro or parsley. Serve immediately.
