Description

Assida zgougou is a traditional Tunisian dessert made from pine nut flour, offering a unique flavor and texture.


Ingredients

  • 2 cups zgougou (pine nut flour)
  • 4 cups water
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup crushed nuts (almonds or pistachios) for garnish
  • 1/2 cup raisins for garnish

Instructions

  1. In a large saucepan, combine 4 cups of water and 1 teaspoon of vanilla extract. Bring to a boil over medium heat.
  2. In a separate bowl, mix 2 cups of zgougou (pine nut flour) with 1/2 teaspoon of salt and 1 cup of sugar until well combined.
  3. Gradually add the zgougou mixture to the boiling water, whisking continuously to prevent lumps from forming.
  4. Reduce the heat to low and continue to cook, stirring constantly, for about 10-15 minutes until the mixture thickens to a pudding-like consistency.
  5. Once thickened, remove from heat and let it cool slightly before transferring to serving bowls or a large dish.
  6. In a small bowl, mix 1/4 cup of unsweetened cocoa powder with a little water to create a smooth paste. Drizzle this over the top of the assida.
  7. Garnish with crushed nuts and raisins. Allow to cool completely before serving.

Notes

  • For a richer flavor, consider adding a tablespoon of honey or maple syrup to the mixture before cooking.
  • You can substitute zgougou with almond flour for a different taste and texture.
