Description
Assida zgougou is a traditional Tunisian dessert made from pine nut flour, offering a unique flavor and texture.

- 2 cups zgougou (pine nut flour)
- 4 cups water
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 cup unsweetened cocoa powder
- 1/2 cup crushed nuts (almonds or pistachios) for garnish
- 1/2 cup raisins for garnish
Instructions
- In a large saucepan, combine 4 cups of water and 1 teaspoon of vanilla extract. Bring to a boil over medium heat.
- In a separate bowl, mix 2 cups of zgougou (pine nut flour) with 1/2 teaspoon of salt and 1 cup of sugar until well combined.
- Gradually add the zgougou mixture to the boiling water, whisking continuously to prevent lumps from forming.
- Reduce the heat to low and continue to cook, stirring constantly, for about 10-15 minutes until the mixture thickens to a pudding-like consistency.
- Once thickened, remove from heat and let it cool slightly before transferring to serving bowls or a large dish.
- In a small bowl, mix 1/4 cup of unsweetened cocoa powder with a little water to create a smooth paste. Drizzle this over the top of the assida.
- Garnish with crushed nuts and raisins. Allow to cool completely before serving.
Notes
- For a richer flavor, consider adding a tablespoon of honey or maple syrup to the mixture before cooking.
- You can substitute zgougou with almond flour for a different taste and texture.
