Description

Aloo Gobi is a delicious and easy vegetarian dish made with potatoes and cauliflower, seasoned with aromatic spices.


Ingredients

  • 2 medium potatoes, peeled and diced (about 2 cups)
  • 1 medium head of cauliflower, cut into florets (about 4 cups)
  • 1 medium onion, finely chopped (about 1 cup)
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 1 tablespoon lemon juice

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the cumin seeds and sauté for about 30 seconds until they start to sizzle.
  2. Add the chopped onion to the skillet and cook until it becomes translucent, about 5-7 minutes.
  3. Stir in the turmeric, garam masala, coriander powder, chili powder, and salt. Cook for another 1-2 minutes until the spices are fragrant.
  4. Add the diced potatoes and cauliflower florets to the skillet. Stir well to coat the vegetables with the spices.
  5. Cover the skillet and cook on low heat for about 20-25 minutes, stirring occasionally, until the potatoes and cauliflower are tender. If needed, add a splash of water to prevent sticking.
  6. Once the vegetables are cooked, remove from heat and stir in the lemon juice. Garnish with fresh cilantro before serving.

Notes

  • For a creamier texture, add a splash of coconut milk during the cooking process.
  • For a spicy kick, include diced green chilies along with the onions.
