Description

A delightful Almond Joy Cake that combines almond flour, chocolate chips, and shredded coconut for a rich and flavorful dessert.

Ingredients

Scale
  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup shredded coconut
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
  4. In another bowl, whisk together the almond flour, all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  6. Fold in the shredded coconut and chocolate chips gently until evenly distributed.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For a richer flavor, consider adding a layer of chocolate ganache on top after the cake has cooled.
  • You can substitute the chocolate chips with chopped nuts or dried fruit for a different texture and taste.
  • If you prefer a lighter version, reduce the sugar by 1/4 cup and replace half of the butter with unsweetened applesauce.
