Description

Alfajores are a traditional Argentine cookie filled with dulce de leche and dusted with powdered sugar, perfect for a sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup dulce de leche
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten each ball slightly with the palm of your hand.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  9. Once cooled, spread a generous layer of dulce de leche on the bottom of one cookie and sandwich it with another cookie.
  10. Dust the assembled alfajores with powdered sugar before serving.

Notes

  • For a chocolate twist, substitute 1/4 cup of the flour with cocoa powder.
  • You can also roll the edges of the alfajores in shredded coconut or chopped nuts for added texture and flavor.
