- 1 cup natural peanut butter (unsweetened)
- 1/2 cup granulated erythritol or your preferred keto sweetener
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- In a mixing bowl, combine the peanut butter, erythritol, egg, vanilla extract, baking soda, and salt. Mix until the ingredients are well combined and form a smooth dough.
- Preheat your air fryer to 320°F (160°C) for about 5 minutes.
- Using a tablespoon, scoop out portions of the dough and roll them into balls. Place the dough balls on a piece of parchment paper.
- Flatten each ball slightly with a fork, creating a crisscross pattern on top.
- Carefully place the parchment paper with the cookies into the air fryer basket. Make sure the cookies are spaced apart to allow for even cooking.
- Air fry the cookies at 320°F for 8-10 minutes, or until they are golden brown around the edges.
- Once done, remove the cookies from the air fryer and let them cool on a wire rack for at least 5 minutes before serving.
Notes
- For a chocolate twist, add 1/4 cup of sugar-free chocolate chips to the dough before mixing.
- If you prefer a softer cookie, reduce the cooking time by 1-2 minutes and keep an eye on them to prevent overcooking.
