- 1/2 cup unsweetened shredded coconut
- 1/4 cup erythritol (or your preferred low-carb sweetener)
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup unsweetened cocoa powder (optional for chocolate flavor)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup melted coconut oil (or unsalted butter)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, shredded coconut, erythritol, salt, baking powder, and cocoa powder (if using). Mix well.
- In a separate bowl, whisk together the egg, vanilla extract, and melted coconut oil until fully combined.
- Pour the wet ingredients into the dry ingredients and stir until a dough forms.
- Using a tablespoon, scoop the dough and form small balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with the back of the spoon.
- Bake in the preheated oven for 7-9 minutes, or until the edges are golden brown.
- Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- These cookies are best enjoyed fresh but can be stored in an airtight container for up to a week.
- For a nut-free version, substitute almond flour with sunflower seed flour.
