Description

Zucchini Pizza Boats are a deliciously healthy twist on traditional pizza, using zucchini as the base for a flavorful and nutritious meal.


Ingredients

  • 2 medium zucchinis
  • 1 cup tomato sauce
  • 1 cup grated mozzarella cheese
  • 1/2 cup diced salami
  • 1/4 cup shredded Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Start by heating your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and carefully scoop out the insides with a spoon, leaving a small border to keep the shape intact.
  3. Arrange the zucchini halves on a baking tray with the cut sides facing up. Season them with salt and black pepper.
  4. In a mixing bowl, combine the tomato sauce with onion powder and dried oregano. Generously fill each zucchini half with the sauce mixture.
  5. Layer the top with mozzarella cheese, followed by the diced salami, and finish with a sprinkle of Parmesan cheese.
  6. Bake in the oven for about 20-25 minutes, or until the zucchinis are soft and the cheese is melted and slightly browned.
  7. Once out of the oven, allow them to cool for a few moments. If you like, sprinkle with chopped parsley before serving.
