- 2 medium zucchinis
- 1 cup tomato sauce
- 1 cup grated mozzarella cheese
- 1/2 cup diced salami
- 1/4 cup shredded Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Start by heating your oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and carefully scoop out the insides with a spoon, leaving a small border to keep the shape intact.
- Arrange the zucchini halves on a baking tray with the cut sides facing up. Season them with salt and black pepper.
- In a mixing bowl, combine the tomato sauce with onion powder and dried oregano. Generously fill each zucchini half with the sauce mixture.
- Layer the top with mozzarella cheese, followed by the diced salami, and finish with a sprinkle of Parmesan cheese.
- Bake in the oven for about 20-25 minutes, or until the zucchinis are soft and the cheese is melted and slightly browned.
- Once out of the oven, allow them to cool for a few moments. If you like, sprinkle with chopped parsley before serving.
Notes
- For a meat-free version, swap the salami for chopped spinach, artichokes, or sun-dried tomatoes.
- Add a dash of smoked paprika to the tomato sauce for an extra layer of flavor.
