A delicious and hearty Zucchini Hamburger Casserole that combines ground beef, fresh zucchini, and melted cheese for a satisfying dinner.

- 1 pound ground beef
- 2 medium zucchinis, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the drained diced tomatoes, Italian seasoning, salt, and black pepper. Cook for an additional 2-3 minutes until heated through.
- In a greased 9×13-inch baking dish, layer half of the sliced zucchini on the bottom. Spread the beef mixture evenly over the zucchini layer.
- Top with the remaining zucchini slices and sprinkle the cheddar and mozzarella cheese evenly over the top.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let the casserole cool for 5-10 minutes before serving.
Notes
- For added flavor, consider mixing in some chopped bell peppers or mushrooms with the beef.
- You can substitute the ground beef with ground turkey or chicken for a leaner option.
