Ingredients

  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the drained diced tomatoes, Italian seasoning, salt, and black pepper. Cook for an additional 2-3 minutes until heated through.
  5. In a greased 9×13-inch baking dish, layer half of the sliced zucchini on the bottom. Spread the beef mixture evenly over the zucchini layer.
  6. Top with the remaining zucchini slices and sprinkle the cheddar and mozzarella cheese evenly over the top.
  7. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  8. Let the casserole cool for 5-10 minutes before serving.
