Description
A creamy and delicious Zoodle Alfredo with crispy bacon, perfect for a low-carb meal.
Ingredients
Scale
- 2 medium zucchinis, spiralized into noodles
- 4 slices of bacon, chopped
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the drippings in the pan.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, salt, black pepper, and nutmeg. Cook for 2-3 minutes until the sauce thickens slightly.
- Add the spiralized zucchini noodles to the skillet and toss to coat them in the Alfredo sauce. Cook for an additional 2-3 minutes until the zoodles are tender but still slightly crisp.
- Stir in the cooked bacon and mix well.
- Serve immediately, garnished with chopped parsley.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- Add cooked chicken or shrimp for extra protein and flavor.
