Ingredients

  • 2 medium zucchinis, spiralized into noodles
  • 4 slices of bacon, chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the drippings in the pan.
  2. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, salt, black pepper, and nutmeg. Cook for 2-3 minutes until the sauce thickens slightly.
  4. Add the spiralized zucchini noodles to the skillet and toss to coat them in the Alfredo sauce. Cook for an additional 2-3 minutes until the zoodles are tender but still slightly crisp.
  5. Stir in the cooked bacon and mix well.
  6. Serve immediately, garnished with chopped parsley.
