Description

A creamy and delicious vegan alternative to traditional Boursin cheese made from cashews.


Ingredients

  • 1 cup raw cashews, soaked in water for at least 4 hours and drained
  • 2 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water (adjust for desired consistency)

Instructions

  1. In a food processor, combine the soaked and drained cashews, nutritional yeast, lemon juice, garlic powder, onion powder, thyme, basil, salt, and black pepper.
  2. Pulse the mixture until it starts to break down, scraping down the sides as needed.
  3. Gradually add water, a tablespoon at a time, while processing until the mixture is smooth and creamy. Adjust the water for your preferred consistency.
  4. Taste and adjust seasoning if necessary, adding more salt, lemon juice, or herbs to your liking.
  5. Transfer the cheese to a bowl and refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled or at room temperature.

Notes

  • For a herbed variation, add 1 tablespoon of fresh chopped chives or parsley before blending.
  • For a spicier kick, mix in 1/4 teaspoon of cayenne pepper or crushed red pepper flakes.
