A creamy and delicious vegan alternative to traditional Boursin cheese made from cashews.
Ingredients

- 1 cup raw cashews, soaked in water for at least 4 hours and drained
- 2 tablespoons nutritional yeast
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water (adjust for desired consistency)
Instructions
- In a food processor, combine the soaked and drained cashews, nutritional yeast, lemon juice, garlic powder, onion powder, thyme, basil, salt, and black pepper.
- Pulse the mixture until it starts to break down, scraping down the sides as needed.
- Gradually add water, a tablespoon at a time, while processing until the mixture is smooth and creamy. Adjust the water for your preferred consistency.
- Taste and adjust seasoning if necessary, adding more salt, lemon juice, or herbs to your liking.
- Transfer the cheese to a bowl and refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled or at room temperature.
Notes
- For a herbed variation, add 1 tablespoon of fresh chopped chives or parsley before blending.
- For a spicier kick, mix in 1/4 teaspoon of cayenne pepper or crushed red pepper flakes.
