Ingredients

  • 1 ½ cups almond flour
  • ¼ cup erythritol sweetener
  • ½ cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • ½ cup sour cream
  • 1 cup fresh strawberries, pureed
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • ½ tsp baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour and erythritol sweetener.
  3. Add melted butter to the mixture and combine well.
  4. Press the mixture into the bottom of a greased 9-inch springform pan to form the crust.
  5. In another bowl, beat the cream cheese until smooth.
  6. Add sour cream, pureed strawberries, eggs, vanilla extract, lemon juice, and baking powder. Mix until well combined.
  7. Pour the cheesecake filling over the crust in the springform pan.
  8. Bake for 30-35 minutes or until the center is set.
  9. Let it cool, then refrigerate for at least 4 hours before serving.
