- 1 ½ cups almond flour
- ¼ cup erythritol sweetener
- ½ cup unsalted butter, melted
- 1 cup cream cheese, softened
- ½ cup sour cream
- 1 cup fresh strawberries, pureed
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp lemon juice
- ½ tsp baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour and erythritol sweetener.
- Add melted butter to the mixture and combine well.
- Press the mixture into the bottom of a greased 9-inch springform pan to form the crust.
- In another bowl, beat the cream cheese until smooth.
- Add sour cream, pureed strawberries, eggs, vanilla extract, lemon juice, and baking powder. Mix until well combined.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake for 30-35 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- For a stronger strawberry flavor, add more pureed strawberries.
- Ensure all ingredients are at room temperature for a smoother batter.
- Top with fresh strawberries before serving for decoration.
